Introducing the Alba White Truffle: A Culinary Marvel!
The arrival of the Alba white truffles (tuber magnatum pico) is one of the most important times of the year in the culinary calendar. It's the time when chefs, food connoisseurs and gourmands eagerly anticipate the arrival of this exceptional ingredient. This exquisite delicacy, celebrated for its unparalleled scent and flavour, outshines all other truffle varieties.
White Truffles - Italian Origin
These extraordinary truffles come from the picturesque Piedmont region of Italy, a land rich in tradition and gastronomic excellence and they are famous for their strong aroma, delicious taste and aphrodisiac qualities. For centuries people have travelled from near and far just to savour a little piece. From October until December, the white truffle is harvested from the hills of the Langhe south of Alba and the Monferrato.
What makes fresh Alba truffles so special?
What sets the Alba White Truffle apart is its commanding aroma, which seems to draw you in from the moment you catch a whiff. This aromatic masterpiece carries a scent that's both earthy and ethereal, an olfactory symphony that has inspired poets, chefs, and lovers alike for centuries.
Its taste is equally enchanting, offering a flavour profile that's nothing short of divine. Each bite reveals a harmonious blend of nutty, garlicky and even slightly musky notes, making it an ideal companion to elevate a myriad of dishes.

For generations, people from all corners of the globe have made pilgrimages to Alba, seeking to partake in this annual fresh truffle extravaganza. Whether shaved over pasta, infused into oils or used to embellish a dish, the Alba White Truffle remains an unrivalled ingredient, a symbol of opulence and a testament to the captivating allure of the Piedmont region's culinary heritage.

Please note: because this is a natural product, sizes and shapes will vary. The product may come in several pieces or one piece. The average size of a truffle is usually 10-20g. We will always try to send out whole pieces where possible.
How to clean and keep fresh truffles:
The truffles we deliver are so fresh that they may still have a fine covering of soil or sand from when they were first unearthed. Gently dab with a damp cloth to clean.
We advise consuming our fresh truffles within 3 days of receiving them.
Once they have been gently cleaned, wrap each truffle individually in a fresh sheet of kitchen paper towel. Place the wrapped truffles in a clean, airtight plastic or glass container, such as a flip-top jar with a tight seal. Change the paper towel every morning and re-wrap the truffles. Put them back in their container and refrigerate, repeating the process until you are ready to use them.
We suggest keeping fresh truffles in the coolest part of the fridge, ideally at 1 to 2°C, but be careful not to freeze them!
