BBQ Seafood Recipes

Barbequing is a fast and delicious way to prepare fish while imparting that fantastic smoky flavour and keeping the flesh moist. We like to grill fish whole either marinated in punchy spices or kept simple with herbs and citrus, you can also stuff the cavities with.

 

Sardines with Gremolata

Sardines are a great fish option to throw on the BBQ because they cook quickly and can be grilled whole. The delicate flavour is delicious and needs little else, we finished ours with a simple, zesty gremolata. Top tip: oil the cage before adding the sardines in to prevent skin tearage.

Red snapper is another brilliant fish for grilling whole and this method of preparation ensures that the marinade gets locked in as the fish steams in the banana leaf. This recipe is real showstopper – great for impressing a crowd.
