Venison and Shiitake Dumplings
Autumn is a fantastic time of year to delve into British game such as wild deer. The gamey taste of venison stands up well to strong flavours and is an incredible filling for these dumplings! The shiitake mushrooms can be found year-round and add another layer of umami richness.
Have you ever tried pickled mushrooms? They work so well as part of a buffet, Ploughmans or canape spread, and are wonderful with some crusty bread, butter and cheese.
