Fine Fillet Fish Options
We’ll start with our whole fresh Lemon Soles. This British flatfish is caught off the south coast of England and really is the ideal centrepiece to a light lunch in the summer months. These fish have a sweet white flesh, and aren’t lemony as the name suggests! They can be dusted in flour and pan-fried, and go really well with a drizzle of black butter sauce.
Other additions to this beautiful fish dish include lemon juice and chopped parsley. Another great option is Turbot. With delicate, intimate flavours, Turbot is the best roasted whole in the oven. We recommend serving with a creamy truffled pomme puree and a mousseline sauce.
And if you’ve not tried Red Snapper yet, then make sure you do so this summer. This hugely popular white fish offers a combination of sweet, nutty flavour and firm texture to the discerning palate.
The Red Snapper is a really flexible fresh fish option, going well with herbs and chillies in equal measure. It goes well with soy sauce, coriander and ginger, and is a fine meal option for any cook this summer.
