In recent years, seafood tray roasts have become increasingly popular, but the perfect seafood platter idea isn't always easy to come up with. Here are two easy-to-follow guides to help you design the perfect seafood platter, including one to create a refreshing cold seafood platter.

There are so many products out there to build a mouth-watering seafood platter that will wow your guests.

Specialist Fresh Fish

First, start with some specialist fresh fish.

We have so many fresh fish for you to choose from. The great thing when cooking with fresh fish is that you get to cook with seasonal products, which are offered in their prime quality and size. If you are looking for delicious fresh fish to choose from, try fresh sea bass or cod, which tastes great with a citrusy marinade and buttery corn.

Our fresh fish range also includes unique and prized fish such as Turbot, Swordfish, Sole, Red Mullet or Mackerel.

Specialist Salmon and Tuna

Roast salmon

Salmon and tuna make great additions to a roast seafood platter.

When you have guests over, salmon and tuna might be the most popular fine fish on the table. We offer beautiful Salmon Supremes, as well as 4 to 5kg whole salmons.

When it comes to tuna, you’re left with two choices: Yellowfin or Bluefin. Your taste will ultimately determine which one you choose to serve. Due to its higher fat content, Bluefin tuna meat has a higher price and is perceived as higher quality, also known as the "Wagyu of the sea". Yellowfin tuna meat is leaner, with a lighter taste and might satisfy people who like fish moderately.

Specialist Lobster and King Crab

Cooked and roasted crabs

Take your roast to the next level by adding Lobster and King Crab to it.

We pride ourselves on having one of the most extensive shellfish selections in the UK, for all budgets, from whole Brown Crabs to cooked King Crab clusters.

In a seafood roast, lobsters and crabs release juices as they cook, which will spread through the rest of your dish and inhibit vegetables. You can also use them to decorate your roast, and they add a lot of texture.

Raw Canadian lobster tails, with their blue color and rich taste, are our personal favourites.

Specialist Prawns and Other Shellfish

Aside from crabs and lobsters, there are a variety of Prawns, Scallops, and more shellfish to explore and add to your next seafood roast.

Shellfish are always a good addition to a seafood tray, as they instantly add a captivating texture to the dish and they’re bursting with flavours.

There are so many you can choose from, Razor Clams, the prized Australian Abalone, Cuttlefish, Spanish Carabineros prawns or Brixham Scallops.

Specialist Frozen Seafood

Thinking of hosting a seafood roast soon but not sure when? It is great to have Frozen Seafood on hand so you can pop it out of the freezer when guests gather.

Fine Food Specialist offers a wide variety of frozen high-quality fish and shellfish, ranging from Nobu-inspired miso-marinated black cod to lesser-known Mahi Mahi or Squid Rings.

Not sure what to choose? Take a look at our Mixed Seafood trays, which contain a bit of every type of shellfish we offer.

Specialist Sauces and Condiments

All great platters need their own selection of sauces and condiments, and that is also true for seafood platters!

Fish is always complemented well by Japanese sauces. In addition to being a must-have, soy sauce will satisfy your guests without a doubt. Our personal recommendation is 20-Year-Aged Soy Sauce. You'll also want to stock up on our Truffle Mayonnaise, the perfect sauce to dip any seafood or vegetables you may have incorporated into your seafood roast for an extra bit of delicacy!
