Salmon Tartare

Description
Our beautiful sashimi-grade salmon is perfect for this fresh, light tartare. Try using different soft herbs such as tarragon, chives or basil, or give things a Japanese twist with wasabi, sesame oil and lime.
- 180g sashimi grade salmon
- A squeeze of lemon juice
- 1/2 baby cucumber, diced
- 1 spring onion, finely sliced
- 1 tablespoon dill, finely chopped
- A few shakes Tabasco or other hot sauce
- 2 cornichons, finely chopped
- 2 teaspoons capers, chopped
- Toast to serve
- Cut the salmon into dice.
- Combine with the cucumber, spring onion, dill, cornichons and capers.
- Mix well and add a few shakes of Tabasco, lemon juice and salt and pepper to season.
- Serve at once with toast.
