Our Manchego cheese is 3-6 months matured and comes from a 3kg wheel. This is an artisan cheese made with raw Manchega sheep's milk. It is produced in La Mancha and carries the the D.O. (Denomination of Origin).
This beautiful Manchego was awarded the silver medal in 2008 at the world cheese awards. Due to Manchego being made from the sheep's milk, it has several distinct characteristics which separate it from similarly brined cow's milk cheeses. Manchego tends to have a much more assertive bite and has a hint of herbs and plants.
We have cut this down to a 500g piece, so that you don’t have to invest in the whole wheel (although it’s so tasty you might be tempted after your first bite!).
Our favourite recipe to use Manchego in is a Spanish take on macaroni cheese, grated into the sauce and ontop, along with roasted red peppers and chorizo pieces.
