BBQ Rock Lobster Tails with Garlic and Herb Butter

Description
These rock lobster tails are brilliant for the barbecue as their shells protect the flesh during grilling. Insert a skewer through the lobster tail to stop it from curling up during cooking. You could also split it lengthways and grill each half, although take care not to over cook it.
- 2 rock lobster tails
- 100g butter
- 2 cloves garlic
- Finely chopped parsley
- Finely chopped chives
- A squeeze of lemon, plus wedges to serve
- Combine the butter and garlic in a small saucepan and sizzle the garlic gently for a minute or so. Add the finely chopped herbs and a squeeze of lemon.
- Insert a skewer lengthways into the lobster tail. Alternatively, you can cut the lobster in half lengthways, brushing the cut side with a little of the melted butter.
- Light the barbecue for direct cooking and cook the lobster tail for around 10 minutes, or until cooked through.
- Use kitchen scissors to slice open the lobster tail and serve with the melted butter.
