BBQ Teriyaki Duck Hearts

Description
Duck hearts are brilliant for BBQ or a hot grill, as they cook quickly and have a lovely, bouncy texture. They can also take strong flavour, such as this salty, sweet and spicy teriyaki sauce.
- 250g duck hearts
- 2 spring onions, cut into short lengths
- 60ml soy sauce
- 60ml mirin
- 60ml sake
- 1 tablespoon honey
- 2 cloves garlic, crushed or finely grated
- ½ teaspoon chilli flakes
- 1 teaspoon finely chopped ginger
- 4 small skewers
- Combine soy, mirin, sake, honey, garlic and ginger in a small saucepan. Bring to a simmer and reduce by half.
- Split the marinade in half and use half to coat the duck hearts. Thread onto skewers, alternating with the lengths of spring onion.
- Cook under a hot grill or on a BBQ for a few minutes each side, basting with the remaining marinade. Serve immediately.
