BBQ Teriyaki Duck Hearts

Description

Duck hearts are brilliant for BBQ or a hot grill, as they cook quickly and have a lovely, bouncy texture. They can also take strong flavour, such as this salty, sweet and spicy teriyaki sauce.

  • 250g duck hearts
  • 2 spring onions, cut into short lengths
  • 60ml soy sauce
  • 60ml mirin
  • 60ml sake
  • 1 tablespoon honey
  • 2 cloves garlic, crushed or finely grated
  • ½ teaspoon chilli flakes
  • 1 teaspoon finely chopped ginger
  • 4 small skewers
  1. Combine soy, mirin, sake, honey, garlic and ginger in a small saucepan. Bring to a simmer and reduce by half.
  2. Split the marinade in half and use half to coat the duck hearts. Thread onto skewers, alternating with the lengths of spring onion.
  3. Cook under a hot grill or on a BBQ for a few minutes each side, basting with the remaining marinade. Serve immediately.
