  1. Let the pomegranate seeds soak in water for about an hour.
  2. Prepare the salad dressing: In a bowl, mix the mustard with a generous pinch of salt and pepper, a tablespoon of red wine vinegar and some honey. Crush the garlic and gradually mix in the olive oil, constantly whisking to achieve a thick, saucy dressing. Once it becomes too thick, it needs to be let down with water.
  3. Prepare the blood oranges by peeling them roughly with a knife. Slice the oranges into slices as thin as possible.
  4. Chop the radicchio and the chicory into juliennes. Place in the bowl and top with the lamb's lettuce and the rocket. Add some salt and pepper and top with the salad dressing.
  5. Place the blood orange slices in the salad bowl, then sprinkle with some blue cheese and the pomegranate seeds. Drizzle an additional splash of dressing over the plate.
