Blue Cheese and Caramelised Onion Mini Quiches

Description
These mini quiches use blue cheese and caramelised onions for a delicious savoury filling. You could swap the cheese for any blue cheese you like, depending on your preference.
The quiches are baked in ready-made tart cases, which saves a lot of time and hassle when you are entertaining guests. Simply fill and pop them in the oven.
- 20 savoury tart shells
- 1 onion, finely sliced
- Butter for cooking
- 2 eggs
- 300ml double cream
- 200g Isle of Wight Blue cheese or another cheese of your preference, chopped or crumbled
- 1 bunch chives, finely chopped
- Preheat the oven to 180C.
- Heat a frying pan and add a thick slice of butter. Add the onions and a pinch of salt, and cook over a very low heat until caramelised, stirring often (around 40 minutes).
- Lightly beat the eggs and add the cream. Season very well with pepper and a little salt. Once the onions are cooked, add them to the mixture along with the cheese and onions already salty. Add the chives and mix well.
- Divide the mixture between the tart cases, taking care not to overfill.
- Cook for 20 minutes and allow to cool before serving.
