Wow your guests with these lobster mini brioche buns! We love lobster rolls, and these ones are bite sized. The truffle dust and summer truffle makes them feel extra luxurious and of course, they taste amazing.
- 30 mini coloured brioche buns
- 300g lobster tails and claws
- 1 tablespoon mayonnaise
- Squeeze of lemon
- Truffle dust
- Summer truffle
- Butter, for cooking
- Heat a generous piece of butter in a frying pan and cook the lobster claws and tails in it, basting them with butter.
- Once cooked, remove and dice the lobster meat.
- Combine the lobster with the mayonnaise, lemon juice and some salt and pepper.
- Split the buns and fill with the lobster mixture, topping with a sprinkle of truffle dust and some shaved summer truffle.
