Earl Grey and Bergamot Martini

Jazz up your cocktail repertoire with this stunning martini! The addition of aromatic bergamot adds a fun seasonal twist and punchy flavour. Note: the ingredients listed is the amount to make 1 martini, scale up to make more.
- 50ml gin
- 50ml strong earl grey tea
- 10ml fresh bergamot juice
- 25ml fresh lemon juice
- 15ml sugar syrup
- 1 egg white
- Sugar, to rim glass
- Bergamot peel to garnish
- Edible flowers to garnish
- Ice
- For the sugar syrup, combine 300g sugar with 100ml cold water (scale up or down using a 3:1 ratio, but you will only need 15ml of syrup for each cocktail) and gently simmer until all the sugar has dissolved and the liquid is clear. Set aside to cool.
- Prepare the earl grey tea. We used 2 tea bags for 100ml of boiling water (this will be enough for two cocktails). Set aside to cool.
- Juice the lemon and bergamot. Shave a sliver of bergamot peel and twist to add as a garnish. Use the leftover juice to rim the martini glass before coating in sugar.
- Add ice to the cocktail shaker with all the ingredients and shake vigorously for about one minute or until a silky foam has formed. Pour into the martini glass and garnish with the bergamot peel and edible flowers.
