Fried Wild Gull’s Egg with Asparagus and Brown Shrimp

This is such a tasty dish that’s so quick and easy to make, yet will cause a stir at the table. The vivid orange yolk of the gull’s egg brings the plate to life while its deep, rich flavour lingers on the palate beautifully. Complimented by the season’s finest asparagus and the sweet nuttiness of the shrimp, this is a dish to delight. We’ve devised the recipe to feed two as a starter but it can easily be scaled up or down.

  1. 1. Bring a pan of water to the boil with the salt. Cook the asparagus for a couple of minutes until they are tender but still retain their bite. When ready, remove the asparagus from the water and plunge into iced water to stop the cooking process.
  2. 2. Meanwhile, place a frying pan over a medium heat with a knob of butter. When it starts to bubble, add the shrimp to the pan and sauté briefly in the butter. Remove from the pan.
  3. 3. Using the same frying pan heat the olive oil. Carefully crack the eggs into the pan and allow them to cook for two to three minutes, or until they are done to your liking. Remove the eggs from the pan and place the asparagus in to warm through.
  4. 4. Plate the dish and serve immediately.
