Hiramasa Loin Sashimi with Grapefruit Dressing and Apple Blossom

Hiramasa Toro is also known as Yellowtail Kingfish, and is highly prized for its firm flesh and sweet flavour, which make it perfect for sashimi. We have dressed it with sweet grapefruit flesh and stunning apple blossoms, which have a crisp texture and bright flavor, adding pops of acidity to the plate.
- 300g Hiramasa Loin
- 3 tablespoons lime juice
- Flesh of 1 grapefruit, finely chopped
- Juice of half a grapefruit
- A large pinch of chilli flakes
- 1 teaspoon aged soy
- 1 teaspoon sesame seeds
- 1 teaspoon sesame oil
- 3 spring onions, finely sliced
- Apple blossom
- Remove the skin from the fish and slice diagonally.
- Combine the lime juice, grapefruit flesh and juice, chilli flakes, soy and sesame oil and whisk.
- Arrange the fish on a plate, pour the dressing over and top with the sesame seeds and spring onions. Finish with the apple blossom.
