- 4 large baking potatoes
- Sour cream
- 2 tablespoons very finely chopped chives
- Truffle dust
- Preheat the oven to 200C.
- Prick the potatoes all over with a fork. Rub a little oil over each potato and season well with salt.
- Bake for around 20 minutes, then turn the heat down to 180C and bake for another 45 minutes to 1 hour or until the potatoes are crisp and cooked through.
- Serve with the sour cream, chives and plenty of truffle dust on top.
