Osso Bucco Tortelloni with Sage Butter

Description
These beautiful fresh handmade tortelloni are filled with slow-cooked osso bucco (veal shank). The filling is so rich and full of flavour that all they need is a simple dressing of melted butter and sage leaves.
- 250g osso bucco tortelloni
- 50g butter
- 6-8 sage leaves
- Grated Parmesan, to serve
- Cook the pasta in boiling salted water for 2 minutes.
- In a frying pan large enough to hold the pasta, melt the butter and add the sage leaves for a minute or so to infuse their flavour.
- Add the pasta with a splash of the cooking water and shake and stir the pan to emulsify.
- Serve immediately with Parmesan.
