Pea Shoot, Mint and Walnut Dip

Description
This dip is full of the fresh flavours of spring. Pea shoots are great as a garnish, but you can also use them in dips and pesto to add a hit of pea flavour. We like to serve this spread on sourdough toast, for a light lunch, starter or picnic dish.
- 100g pea shoots
- Small handful mint leaves
- 50g walnuts
- 2 cloves garlic, peeled
- 4 tablespoons extra virgin olive oil
- 2 teaspoons lemon juice, or more to taste
- Sourdough toast or crackers, to serve
- Reserve a few pea shoots for garnish, then place all the ingredients into a blender and pulse to a paste, seasoning with salt.
- Serve with toasted sourdough or crackers.
