Salmon Sashimi with Sesame and Ginger Dressing

Description
This is a light, fresh salmon meal that’s perfect for a spring lunch or a light starter. Make sure to use sashimi-grade salmon for this dish, it needs to be very fresh and high quality if you are going to eat it raw. The dressing is full of the zippy flavours of ginger, spring onion, soy and sesame, which complement the fatty fish so well.
- 2 x 180g sashimi grade salmon fillets
- 1 small spring onion, very finely sliced
- 1 inch piece ginger, peeled and very finely chopped
- 2 tablespoons light soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds, plus extra to garnish
- Combine all the ingredients except the salmon in a small bowl and mix well to combine.
- Remove the skin from the salmon, slice on the diagonal against the grain, and arrange on a plate.
- Serve the salmon dressed with the sauce.
