Taleggio and Perigord Truffle Toastie

Description
A good toastie is very hard to beat. It must be golden and crisp on the outside and full of gooey cheese in the centre. Add Perigord truffle shavings and you have something very special indeed.
- Butter, softened (mayonnaise will also work)
- 4 slices sourdough bread
- 200g Taleggio
- Handful of grated low moisture Mozzarella
- Handful of grated Cheddar
- 1 Perigord truffle
- If you have a toastie maker, preheat it. If you don’t, set a heavy based frying pan over a medium heat.
- Spread the outside of your bread with softened butter (mayonnaise also works well, although won’t be as golden).
- Layer up the Taleggio, shaved truffle, Mozzarella, and Cheddar. Close the toastie, making sure the buttered slice is facing up.
- Either place the toastie in your toastie machine, or fry on both sides until golden brown, weighed down with something heavy (like another pan). Serve with more truffle shavings on top.
