Teriyaki mahi-mahi

Description
Mahi-mahi is a white fish that’s great for grilling thanks to its large flakes and firm texture. We love to cook it in a sweet and salty teriyaki marinade, which caramelises under the grill and is the perfect partner to a bowl of fluffy rice. Try serving it with some asparagus dressed with sesame oil.
- 2 mahi-mahi fillets
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 2 tablespoons sake
- 1/2 tablespoon honey
- 1 clove garlic, crushed
- 1 red chilli, finely chopped
- 1 teaspoon ginger, finely chopped
- Combine all the sauce ingredients and mix well, then tip half of the marinade over the mahi-mahi, turning to coat.
- Preheat a grill to medium and cook the mahi-mahi for around 8 minutes, taking care not to burn it. Cooking time will depend on the thickness of the fillets. Brush with the remaining marinade occasionally.
- Serve the mahi-mahi with some rice and seasonal green vegetables, such as asparagus.
