Description

Mahi-mahi is a white fish that’s great for grilling thanks to its large flakes and firm texture. We love to cook it in a sweet and salty teriyaki marinade, which caramelises under the grill and is the perfect partner to a bowl of fluffy rice. Try serving it with some asparagus dressed with sesame oil.

  1. Combine all the sauce ingredients and mix well, then tip half of the marinade over the mahi-mahi, turning to coat.
  2. Preheat a grill to medium and cook the mahi-mahi for around 8 minutes, taking care not to burn it. Cooking time will depend on the thickness of the fillets. Brush with the remaining marinade occasionally.
  3. Serve the mahi-mahi with some rice and seasonal green vegetables, such as asparagus.
