Grilled Tiger Prawns with Seaweed Butter

Description

This is a perfect example of how simple it can be to cook a fantastic meal when you have really good quality ingredients. Whole tiger prawns are split and grilled quickly in seaweed butter, which adds richness and a salty umami flavour. Serve with plenty of bread for mopping up all that melted butter!

  1. Lay each prawn on its back and use a sharp knife to split lengthways, and flatten so that they are butterflied.
  2. Dot with plenty of the seaweed butter and place in a dish under a hot grill for a few minutes, or until cooked through.
  3. Serve with the bread and lemon wedges.
