- 500g macaroni pasta
- 180g white truffle sauce
- 150g cheddar, grated
- 500ml full fat milk
- 50g flour
- 50g butter
- 50g mixed dried mushrooms
- Mixed dried herbs
- Nutmeg
- Salt & pepper
- Before cooking, rehydrate the mixed dried mushrooms by placing them in a bowl of hot water for 30 minutes.
- Boil some water for the macaroni and preheat the oven to 200C/180C fan/gas 6.
- Make the bechamel: melt the butter in a saucepan, add the flour and make a roux. As soon as the mixture starts to turn golden, gradually add some milk and stir constantly. After the mixture has thickened, add the white truffle sauce, half of the cheddar, mixed herbs, nutmeg, salt, and pepper.
- Add the macaroni to the boiling pot of water and cook for 2 minutes less than the packaging instructions.
- Chop the girolle & trompette de la mort mushrooms.
- In a baking dish, add the pasta with the mushroom pieces. Pour over the truffle bechamel and mix together. Top with the rest of the grated cheddar.
- Bake for 20 minutes or until golden on top.
