Venison Burgers

Description
Try these venison burgers if you fancy something different from the usual beef - they’re leaner but full of rich flavour. We like to keep the flavours simple with a mustardy mayonnaise and some grilled onion and pea shoots .Watercress or other peppery greens would also be lovely
- 2 venison burgers
- 2 brioche buns
- 2 thick slices from 1 onion
- 1 tomato, sliced
- 2 teaspoons Dijon mustard
- 2 tablespoons mayonnaise
- 2 handfuls pea shoots
- Cook the burgers by heating a heavy based frying pan (preferably a cast iron griddle) or barbecue.
- Add a little oil and the burgers and cook for around 5 minutes each side, or until cooked through. Grill the onion slices in the same pan until soft and lightly charred.
- Toast the buns and spread with the mayonnaise. Add the pea shoots, top with the burgers, onion and tomato. Close the buns and serve.
