Cook the burgers by heating a heavy based frying pan (preferably a cast iron griddle) or barbecue.
Add a little oil and the burgers and cook for around 5 minutes each side, or until cooked through. Grill the onion slices in the same pan until soft and lightly charred.
Toast the buns and spread with the mayonnaise. Add the pea shoots, top with the burgers, onion and tomato. Close the buns and serve.
