Dutch Milk-Fed Veal Cutlets, Cap-On, Fresh, 2 x +/- 400g

These Dutch milk-fed veal cutlets are beautifully tender and delicate in flavour. To cook, allow to come up to room temperature and season just before placing in a smoking hot pan. Brown the cutlets for around 4-5 mins per side, before placing in the oven. To finish, baste the meat in foaming butter and thyme. Let rest before serving.
