An absolute delight in the charcuterie world, Jamon Iberico Cebo de Campo, is one of the finest cured meats in the world. The Iberian Cebo de Campo pig is 75% pure Iberican; the mother is 100% Iberian whilst the father is 50% Iberian. Their diet is based on a mixture of acorns, grain and legumes which are eaten on the Dehesa pasture, a vast forest spread over parts of Spain which is where the pigs are kept to graze on for a minimum of sixty days. The acorns that they eat on the Dehesa are what give the pigs their delicious and distinct rich, nutty flavour. The pigs are only slaughtered at a minimum of twelve months of age and at a minimum weight of 115kg. This whole leg will feed up to thirty people so it could be the perfect centre piece at your dinner party!
