Mangalitza pork is prized for it’s stunning marbling of creamy fat, akin with the same characteristics of Wagyu. The fat that runs through the meat is soft, with a low melting point, it is fabulous to cook with as you are will always be left with a juicy and succulent cut, which is actually easier to digest! As well as a stunningly full-flavoured pork, the fat also makes an amazing crackling. These loins are delicious cooked like a regular pork steak – just make sure to use the fat well, whether you melt it down to cook potatoes as a side dish, or make the perfect crackling.
