Mangalitza pork is prized for it’s stunning marbling of creamy fat, akin with the same characteristics of Wagyu. The fat that runs through the meat is soft, with a low melting point, it is fabulous to cook with as you are will always be left with a juicy and succulent cut, which is actually easier to digest! As well as a stunningly full-flavoured pork, the fat also makes an amazing crackling. These loins are delicious cooked like a regular pork steak – just make sure to use the fat well, whether you melt it down to cook potatoes as a side dish, or make the perfect crackling. Serve with a chunky homemade apple sauce and crispy potatoes.
The mangalitza pig is a Hungarian breed, which is characterised by its shaggy outer coat, which has a history of being fit only for the mouths of royalty.
It is widely believed that both Iberico Pork and Magalitza Pork are considered to be 'Wagyu' of the pork world as a result of their superior flavour and lustrous meat. However, what exactly is the difference between these two types of meat? In this match of excellence, does one pork breed excel over the other?
