Introducing puntarella, also known as puntarelle, an Italian vegetable that is known for its unique appearance and bitter flavour. Puntarella is often enjoyed for its nutritional benefits and it can be prepared in various ways to suit different tastes. It originates from central Italy and features jagged-shaped green leaves and a round bulb head. The puntarelle plant has large, white buds and florets at its centre.

Flavour and Texture

The flavour of puntarella is slightly bitter, reminiscent of radicchio. It has a crunchy texture that adds to its overall appeal.

Nutritional Benefits

Puntarelle vegetable is rich in essential nutrients. It's high in phosphorus, calcium, and Vitamin A making it a nutritious addition to the diet.

Preparation and Serving

Puntarella or puntarelle is commonly consumed raw to maximize its nutritional benefits. It can be dressed with a homemade dressing made from ingredients such as garlic, olive oil and lemon.

Additionally, the leaves of italian puntarelle can be blanched (briefly boiled and then cooled) and then fried in a little oil, garlic and salt. They can also be cooked with a few anchovies for added flavour. This preparation results in a tasty side dish that can be served alongside pasta, salads and other main courses.
