Ice lettuce is a very unique succulent with fresh, crisp leaves that are covered in ice-like beads. It’s very refreshing and perfect for combining with seafood and sweet fruit like mango on a hot summer day.
Ingredients
- 4-6 tiger prawns
- 120g ice lettuce
- 1 mango, peeled and diced
- 1 handful mint leaves, finely sliced
- 1 red chilli, finely chopped
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 1 teaspoon honey
Method
- Cook the prawns in salted boiling water for 3 minutes, or until totally pink. Refresh under cold water (you can peel the prawns and remove the digestive tract before serving, or leave some whole for presentation).
- Combine the chilli, lemon juice, olive oil, honey and mint in a bowl or a clean lidded jar and whisk or shake to combine.
- Arrange the prawns, mango and ice lettuce on two plates and pour over the dressing.
