The fine de Claire is a very popular French variety of oyster that has been around for centuries. The name is also a nod to the conditions which make them so unique. To be classified as this special variety of oyster, they must lie in ‘claires’ or shallow ponds that are connected to the sea for at least 28 days. The fine Claire oyster is available all year-round.

Maldon oysters are another fantastic type of oyster we offer. These oysters have been cultivated in the Blackwater estuary for hundreds of years and are firmly established as one of the most popular oyster varietals in the country. Maldon oysters are sustainable grown and harvested in traditional oyster beds and offer a delicious flavour and distinct flavour courtesy of their salt marsh environment. 

Last, but certainly not least the rock oysters are regarded as the most common oyster variety. They differ to the native oysters in that they originated from Japan but thrive in our waters. Rock oysters are also available all year round and like all oysters are great eaten raw but are the best for grilling if you are looking to cook your oysters. The rock oyster shell is slightly deeper and can hold toppings better too.
