The spring white truffle has a very delicate taste. The aroma varies from very strong to medium and the size is generally smaller than winter truffles. The marbling inside has strong white veins with a brown centre, and the outside colour varies from creamy beige to a russet brown. Flown in from Northern Italy and Eastern Europe, the albidium pico white truffle marks the start of spring. For a decadent breakfast, try shaving this magnificent white truffle generously onto free range scrambled eggs then finish with a drizzle of white truffle oil.

PLEASE NOTE: We do not ship truffles on Mondays as we receive them fresh from Italy on Tuesdays and Thursdays 

Please note that because this is a natural product, sizes and shapes will vary. The product may come in several pieces or in one piece. The average size of a truffle is usually 10-20g. We will always try to send out whole pieces where possible.

How to clean and keep fresh truffles

The truffles we deliver are so fresh, they may still have a fine covering of soil or sand from when they were first unearthed. Gently brush off any excess soil or sand. 

We advise to consume our fresh truffles within 3 days of receiving.

Once they have been gently cleaned, wrap each truffle individually in a fresh sheet of kitchen paper towel. Place the wrapped truffles in a clean, airtight plastic or glass container, such as a flip-top jar with a tight seal and fill it with uncooked rice, about one inch.
Change the paper towel every morning and re-wrap the truffles. Put them back in their container and refrigerate, repeating the process until you are ready to use them.

We suggest keeping fresh truffles in the coolest part of the fridge, ideally at 1 to 2°C, but be careful not to freeze them!

Flavour: 

Fresh truffles, although pungent, may not always give you the intense flavour you would expect and may have tasted in a restaurant. This is because all restaurants will also use truffle oil or butter to enhance the flavour. We recommend that you also use some of our truffle oils or truffle products to give you the best results!
