Valrhona's new Dulcey 35% is neither milk or dark or white, it is blonde. It combines a wonderful flavour of both biscuit and fudge with a malty undertone. It's well worth a try if you have a sweet tooth or are a fan of Caremac or blondie bars! The chocolate is very creamy, not too sugary and the shortbread flavour will keep you coming back to bake with it again and again! The recipe for this Dulcey Blond flavour took eight years to develop and perfect, after Frederic Bau the founder of Valrhona, left white chocolate in a double boiler for too long and it caramelized into a delicious-smelling caramel aroma.
These melting drops are perfect to use in bars, mousses, ice-creams and sorbets. The flavour of Dulceyn Blond pairs well with citrus, red fruits, coffee and salt.
Dulcey 32% is a smooth, creamy chocolate with a velvety and enveloping texture and a warm, blond color.
