Vegetable Mirepoix Glace, 600g

This rich vegetable glace is made with carrots, leeks, celery and onions (a mirepoix) to make a perfectly balanced earthy flavoured reduction. A little of this glace goes a long – simply add 25g to a litre of water to make a stock, or use sparingly by mixing a little into oils or butters. This vegetable glace is perfect as a base for warming winter soups or mixed into dressings to add flavour to warm salads.
